Tuna Avocado and Cannellini Bean Salad Recipe

Avocado salad with cannellini beans

A salad that is easy to make and provides a great source of your daily vegetable intake.


300g can cannellini or butter beans, drained
315g can tuna in spring water, drained
1 avocado, skin and pip removed, chopped
1 tomato, chopped


Juice of ½ lemon
2 tablespoons low fat natural yoghurt
1 tablespoon chopped basil
1 teaspoon grated lemon rind

Freshly ground black pepper, to taste

Recipe Instructions

In a small bowl fold in the tuna, beans, tomato and avocado.  In a separate bowl mix together all the dressing ingredients and pour over the tuna mixture.

Serving suggestion
Serve in pita bread pockets, whole meal rolls or pile on top of jacket potatoes.
