Thai Prawns and Avocado Recipe

Avocado starter with Thai prawns

A spicy starter that will bring a bit of eastern promise into your life.

Ingredients

3 avocados
2 fresh red chilies
1lb large cooked prawns, peeled
10 oz fresh mixed leaves
Juice of 1 lime
Small handful of coriander

Recipe Instructions

Prepare the prawns.
Squeeze the lime juice into a bowl and mix in the finely chopped coriander and chillies.  Add the prawns and mix in well.  Place in the fridge and leave to marinade for at least an hour.

Serve.
Cut the avocados in half and peel off the skin.  Cut into fan shaped pieces.  Drizzle the extra virgin olive oil over the mixed leaves and place the prawns on top of the leaves.  Serve the avocado on the side.
