Stuffed Baked Avocado with Seafood Recipe

A healthy and delicious avocado main course

This seafood salad is full flavored and baked. It is topped with potato chips and can therefore be served as a full meal.


11 ½ oz. can shrimp
3/4 avocados (peeled and halved)
166 ½ oz. can crab meat or tuna
½ cup crushed potato chips
¾ cup mayonnaise
3 green onions (chopped)
2 tablespoons lemon juice
¾ cup chopped celery
1/8 teaspoon salt
1/8 teaspoon pepper

Recipe Instructions

Sprinkle the lemon juice over the avocado halves.

Cut the seafood into small bits and mix together with the mayonnaise, onions, celery and seasoning.  Add more mayonnaise if needed.

Spoon the seafood mixture into the avocado halves and top this with crushed potato chips.

Bake the avocados at 375C for 30 minutes.
