Simple Avocado Soup Recipe

One of our easiest avocado soup recipes.
Yield: 2-4    Preparation Time: 10 mins    Cooking Time: 20 mins
A very simple to make yet smooth and delicious avocado soup that is best served hot.


1 ripe avocado - cut in half, stoned and peeled
1 small seeded and chopped green pepper
1 heaped tablespoon flour
2 tablespoons butter
1 ½ pints chicken stock
¼ pint milk
seasoning to taste
to garnish – chopped parsley or chives

Recipe Instructions

Make the paste.
Melt the butter in a large saucepan and slowly stir in the flour. Cook over a low heat for roughly three minutes but do not brown. Remove the mixture from the heat and while beating add the milk. Stirring constantly, add the stock, the green pepper and the seasoning. Simmer on low heat for 15 minutes.

Thicken up the soup.
Mash up the avocado into a smooth cream. Blend the avocado into the stock and put it back on the stove. Simmer the soup for a few minutes on a low heat but do not bring it to the boil.

To serve.
Strain the soup to remove the green peppers. Garnish with parsley or chives.
