A perfect avocado guacamole recipe

A lovingly researched recipe for the perfect Guacomole. The key to a good Guacomole is picking perfectly ripe avocados.


2 ripe avocados
½ ripe tomato, chopped with seeds and pulp removed
½ red onion, minced
1 – 2 Serrano chilies, minced with stems and seed removed
2 tablespoons finely chopped cilantro leaves
1 tablespoon lemon juice or fresh lime
½ teaspoon coarse salt
A dash of freshly ground black pepper.
Garnish – red radishes or jicama

Recipe Instructions

Prepare the mixture.
Cut the avocados in half and remove the pip.  Scoop out the flesh and put into a mixing bowl.  Mash the avocado using a fork.  Add the chopped onion, cilantro, lime/lemon juice, salt and pepper and mash the mixture some more.  Add the chilies slowly until you reach the right degree of hotness.  Cover the mixture with plastic wrap and place in the fridge to chill.

Just before serving add the chopped tomatoes and mix thoroughly. Serve with tortilla chips.
