Hot Avocado Soup with Cumin and Cream Recipe

A mouth-watering hot avocado soup recipe

This is a delicious soup that can be served either hot or cold.

Ingredients

2 tablespoons fresh lemon juice
¼ cup sherry (dry)
1/8 teaspoon white pepper
¼ teaspoon salt
¼ teaspoon cumin (ground)
1 cup whipping cream
1 large very ripe Haas avocado
2 cups chicken broth

Recipe Instructions

Heat.

Heat up the chicken broth over a low heat but do not bring it to the boil.  Once hot, take it off the stove and set it aside.

Blend.
Peel and stone the avocado.  Cut it up into pieces and puree it in a food processor or blender. Pour in the whipping cream, the hot broth, cumin, salt, pepper, sherry and lemon juice.  Blend these all together very briefly. Re-taste and add more salt and pepper if necessary.

Serve.
The soup can be served immediately or alternatively chill for at least two hours and then serve.
