Avocado Quiche Recipe

A very tasty avocado quiche recipe

Quiches make a tasty lunch either hot or cold - try adding thick slices of avocado to really beef up your quiche!


8 scallions, chopped
2 ripe avocados, sliced about ¼ inch thick
2 ripe medium tomatoes, chopped
3 eggs, beaten
3 cups grated cheddar cheese
2 x 9-inch deep pie shells
1 cup sour cream
Salt and black pepper to taste

Recipe Instructions

Preheat the oven.
Preheat the oven to 375 degrees.

Make cheese mixture.
Mix together the sour creams, eggs and cheese.  Then stir in the scallions, the tomatoes and the salt and pepper to taste.

Prepare the pie.
Place the avocados on the bottom of the pie shells.  Pour over the cheese mixture and spread it out evenly.

Bake the pies for about 40 – 45 minutes until golden and puffy.  Remove from the oven and let them stand for 10 minutes.

Add a spoonful of fresh avocados, tomatoes and scallions with a dollop of sour cream on top of the quiche.
