Avocado Omelette Recipe

Try something different in your omelette!
Yield: 4    Preparation Time: 10 mins    Cooking Time: 5 mins
This makes a hearty breakfast omelette packed with mushrooms, avocados and melted cheddar cheese.

Ingredients

8 eggs
1 cup fresh mushrooms sliced
1 Hass avocado (seeded, peeled and diced)
½ cup grated cheddar cheese
1 sliced green onion
Salt and pepper

Recipe Instructions

Mix.
Beat the eggs with a fork until it turns a lemon colour.  Add the green onion, mushrooms and avocado and mix well.  Add salt and pepper to taste.

Cook.
Pour the mixture into a pan and cook until the bottom of the omelet is set.  Flip the omelette over and continue cooking until set.  Remove from the pan and sprinkle with cheese.

Serve.
Cut the omelette into pie-shaped wedges and serve immediately.
