Avocado and mozzarella salad Recipe

A quick avocado starter with mozzarella

This is an ideal salad starter, perfect for those hot summer days.


2-3 ripe tomatoes
1 tablespoon pine nuts
1 avocado
1-2 cups mozzarella cheese
black pepper

For the dressing.
1 tablespoon white wine vinegar
3 tablespoons olive oil
1 small clove garlic
fresh basil

Recipe Instructions

Roast the nuts.
Preheat the grill on high.  Line a baking tray with tin foil and place the pine nuts on the tray.  Grill for 2 – 3 minutes until the nuts are browned, shake the tray frequently to turn the nuts.  Remove from the oven and leave to cool.

Prepare the salad.
Cut the tomatoes and mozzarella cheese into slices.  Cut the avocados in half and remove the stones.  Peel off the skin of the avocado and cut width ways into slices.  Arrange the slices of tomato, avocado and cheese in rows on a serving plate.

Make the dressing.
Whisk together the olive oil and wine vinegar.  Peel and crush the garlic and finely chop 1 tablespoon of basil leaves, add this to the dressing and whisk together with a fork.

Drizzle the dressing over the salad and garnish with the toasted pine nuts, basil leaves and plenty of black pepper.  Serve immediately.
