Avocado and Chicken Salad Recipe

A healthy and meaty avocado salad

Chicken and avocado salad is a light meal that is filling and satisfying. A favorite for weight watchers and people watching their cholesterol levels.


1 Medium avocado
One Medium Chicken Breast Fillet
2 Tomatoes
250g Feta Cheese
10 black olives
2 Cups Lettuce
½ Onion
½ Lebanese Cucumber
Juice 1 Lemon
2 tablespoons Extra Virgin Olive Oil

Recipe Instructions

Cook the chicken.
Steam or dry roast the chicken breast until tender.  Once cooled, cut the chicken into thin strips and arrange them on a serving plate.

Other ingredients.
Peel and slice the avocado into thin strips.  Dice the cucumber, tomato and the feta cheese.  Shave the lettuce and the onion.  Place all of the above ingredients into a mixing bowl and add the olives.

Make the dressing.
Blend together the lemon juice and the olive oil and sprinkle over the other ingredients.

Mix together all the salad ingredients and allow the dressing time to infuse into the salad.
