Avocado and Chicken Pizza Recipe

Avocado makes a delicious and healthy topping on pizzas, try it for a change.


1 cup chopped cooked chicken breast meat
2 avocados - peeled, pitted and diced
4 (7 inch) pre-baked pizza crusts
1 tablespoon chopped cilantro
1 clove garlic, peeled
1 cup cherry tomatoes, quartered
1 tablespoon fresh lime juice
1 tablespoon olive oil
1 cup shredded Monterey Jack cheese
Pinch cayenne pepper
Salt to taste

Recipe Instructions

Preheat the oven.
Preheat the grill of your oven.

Combine the avocados and cilantro in food processor and puree.  Add the lime juice and salt to taste.  Once mixed cover and set aside.

Prepare the pizza.
Slice the garlic clove in half and rub the top of the pizza crusts with the cut side to add flavour.  Brush both sides of the pizza crust with olive oil and spread the avocado mixture thickly on the top of each crust.  Arrange the chicken and the tomatoes on top.  Sprinkle the cheese on top and season with cayenne pepper.  Place the pizza crusts on a baking tray and place in the preheated grill.

Grill for roughly 5 minutes until the cheese has melted and the crust is lightly toasted.
