Avocado and Carrot Soup Recipe

One of the most nutritious avocado recipes.

This is a light, nutritious yet filling dish that is easy to make. Ideal to serve as a light dinner or even as a brunch. Must be served hot.

Ingredients

1 potato
1 avocado
4 carrots
1 small diced onion
1 tablespoon oil
40ml water
40ml hot milk
Salt
Rosemary and thyme

Recipe Instructions

Prepare and cook vegetables.
Wash all the vegetables, peel them and place them into a heated pot with the oil.
Add the water and the spices.  Cover the pot and cook over a medium heat until the vegetables are cooked.

Blend.
Remove from the heat and place the vegetables into a blender and blend until completely smooth.

Thicken.
Put the pureed vegetables back into the pot and place on a medium heat.  Add the hot milk and let the soup simmer for 3 – 4 minutes.

Serve hot with toasted garlic bread.
